F is for Food, Frances, Fantastic, Family, Finger...

Do I talk funny? I swear every time I say something, the majority of people respond with "huh?" and I have to repeat myself. The majority, and when I say majority, I mean like 80% of the people I work with at Kiawah, are not from the South. I came back to the South to get away from being made fun of for my accent (not that it bothers me that much or at all). But people, though I love you dearly, you are in the South; embrace it and don't hate! I like being Southern and sassy.
And I know this is the truth...

2-10ish Shift prepping for and working in JP.
*Ice Cream for Erin- Basil and Bourbon.
*Made and Baked Scones.
*Blackberry Sauce.
*Pralines.

After work, I drove straight to the Holiday Inn Express (yay, Priority Club) to see Mom, Jess, Greens, and Gam. We hung out for a bit (and watched UGA lose in Round 2?!), and then, I went back to my apartment to pass out.

Saturday, March 19, 2011
I got up early, or early for me, to get dressed and meet the fam for brunch/lunch. We drove downtown to eat on Broad/King/East Bay, but a Walk for Water fundraiser was happening. Gertie the Garmin was incredibly frustrated, not being able to go where she wanted to go, as were all the passengers in the car. Eventually, after a scenic tour of Charleston, we headed back to West Ashley, where I live, to eat at Med. Bistro (where Katie and I went). The spicy chicken quesadillas and spinach and artichoke dip were delish.
"Hey guys, let's take a picture of us driving around Charleston!" Jess. Click. Result.

Then, it was off to work for me!

2-11ish Shift prepping for and working in JP.
*Chocolate Chip Cookies.
*Lime Chantilly.
*Key Lime Pies.
*Mascarpone Whip.
*Lemon Tuile.
*Mac. Baskets.
*Pecan Tuile.
*Creme Brulee.
*Scones.
*While Robert baked the Chocolate Hazelnut Cake the day before and Erin whipped up the Nutella Buttercream, I put together a cake for my sister. I piped a border and added a chocolate shamrock.

My family came to eat at JP on Saturday night, and everyone at JP treated them like royalty, with appetizers and champagne. Mom, Jess, Kellee (and Butterbean), Brandon, Greens, and Gamma seemed impressed and thoroughly enjoyed dinner. Chef Nick let me put together anything I wanted for them for dessert. They weren't even given a dessert menu. :) And, I got to bring it out to their table. Here's the spread:
Key Lime and Pecan Pie (for Butterbean).
Lemon Cake and Creme Brulee.
And, a special plate for the birthday girl and hot TOTY, Bread Pudding.
Jess, me, and her special cake!

Sunday, March 20, 2011
On Sunday morning, we, with Brandon and Kellee, who came to visit from Statesboro, in tow this time, ventured downtown again. Again, we were unsuccessful. Too long of a wait at Hominy Grill. No place to park. We ended up at Panera, in West Ashley. Bah.

Though I didn't see the family much while they were here, I enjoyed having them here. I hope y'all enjoyed visiting Charleston and will come back again soon!

2-10ish Shift prepping for and working in JP.

*Baked Creme Brulee.
*Made Key Lime Pies.
*Dipped Pretzels.
*Mac. Baskets.
*Pecan Tuile.
*Double Cream Orange. (Thanks, Robyn.)
*Made and Baked Scones.
*Mixed Berry Sauce.
*Pecan Pie (which included rolling sucre dough out with Sheeter.)

Monday, March 21, 2011
1-10ish Shift prepping for and working in JP.
*Made and Baked Scones.
*Caramel Creme Brulee Base.
*Lemon Tuile.
*Pralines x 2 (burnt the first batch, oops!).

In JP
*Cut Cake (and proceeded to cut my finger in the process, while cleaning the knife. JD helped wrapped my finger and it eventually stopped bleeding. I did have to wear a finger cot the whole night, which is an instant sign, saying "hey, look at me, I'm an idiot and cut myself.")
*Cut Croissants for Bread Pudding.
*Piped Goat Cheese for JP.
*Sliced Fennel in Slicer and placed in Dehydrator for Banquets.

Spring Break?

Remember the good ole days? Spring Breaks at the beach in Destin, FL? Young Life trips to the DR (Dominican Republic for all you people who don't know but should know)? (Did I go/ do anything else over Spring Break in high school or college? Hmm.) Well, I remember those weeks of freedom fondly, like Spring Break happened last year or something. :)

I am sad to say that there will be no Spring Break for me this year. It is like I'm growing up and have a big girl job and am forced to think like an adult (but I don't have to act like one.. hehe). This officially sucks. But, for those who suffer from "no Spring break, what, huh?" syndrome like me, the cure is to have someone come visit you over their Spring Break. Then, you can vicariously live through this person, do exciting fun things/ go on new adventures, and explore a pretty cool town that you just moved to in the last month or so. My friend, Katie Lynn Weiser (Mooney) arrived on Monday around 6:30 and left yesterday morning around 9. So, it was just a "weekend" 's amount of time, but it was a blast, hanging out with my bff (who I do not get the pleasure of seeing very often) and taking over Charleston.

Here's is an overview and picture book of our two days in and around Charleston:

Monday, March 14, 2011
*Katie, welcome to the...
*Dinner at the Noisy Oyster on Market Street.
*Dessert at Kaminsky's Dessert Bar on Market. (If I ever open my dream dessert bar/ restaurant, I would want it to be similar to this, though there are so noticeable changes I would make.)

Tuesday, March 15, 2011
*Kiawah and the Sanctuary Hotel.
Front of the Sanctuary Hotel, where I have the pleasure of working!
The back, beach side of the Hotel.

*Pizza lunch at Freshfield's (a little retail village at the entrance to Kiawah Island and Seabrook Island).
*Folly Beach.
No beach trip is complete without jumping pictures. I was successful at taking this picture on the first try.
Katie was successful at taking this picture on the first try. Jumping pic pros, right here!

*Rainbow Row.
Kristy, we could live in one of these when we room together in Charleston. Pink one?

*Arthur Ravenel Jr. Bridge.
This is not the greatest pic, because of the wind, but it works.

*King Street. (A little unsuccessful wedding shopping. :()
*Yogurt at 32* Below.
*Dinner at Med. Bistro. (Delish Mushroom Risotto!)

Wednesday, March 16, 2011
I was scheduled to work at 1, meaning I prepped and worked service at JP.
*Irish Sweet Potatoes.
*Blackberry Sauce.
*Lemon Tuile.
*Pecan Tuile.
*Mac. Baskets.
*Dipped Pretzels.
*Unmolded Bread Pudding.
*Attempted to Unmold Pecan Pies. :)
*Baked Scones.
*Mascapone Whip.
*Wrapped Creme Brulee.

While I waitied for orders at JP, I...
*Shapped Potatoes (special mignardises for St. Patty's Day).
*Cut the Lemon Cake.

They changed my station in JP, with spring and summer, the busy season, just around the corner. It gives me more room, but it is going to take some getting used to.
Tables parallel to each other with the cart turned sideways.
Plating table, facing the refrigerator.
A table wanted to share some desserts: Pecan Pie with Vanilla Ice Cream and Chocolate Sauce and Key Lime Pie with a Macademia Nut Basket, Strawberry Ice Cream, and Blackberry Sauce.
Second Plate: Bread Pudding (I've posted a picture of that. The tuile should be flipped.) and Caramel Creme Brulee with Mascapone Whip. and Chocolate Pretzels.

Thursday, March 17 2011
In honor of St. Patrick's Day, we served green soda bread, an Irish car bomb dessert, and Irish sweet potatoes for mignardises.

I worked from 1-10ish again, helping prep and then serve.
*Pralines.
*Baked Scones.
*Pecan Pies.
*Tart Dough on Sheeter for Pecan Pie Crust.
*Mac Baskets.
*Went over prep with Temp.
*Lime Chantilly.

In JP...
*Cut Pralines for Bread Pudding.
*Rolled Butter for the guys JP.
*Flowers for Lemon Cake.
Special St. Patrick's Day Dessert, Irish Car Bomb: Guinness Brownie, Jameson Caramel, and Bailey's Ice Cream, with a festive Chocolate Shamrock.

I forgot to mention in my last post, though I did mention her in the Mardi Gras shenanigans, that my new roommate, Alexa, moved in the first weekend in March. She is originally from PA but is a student at Johnson and Wales in Charlotte, NC (though she will finish her degree at the Providence, RI, campus.)

The Executive Pastry Chef at the Sanctuary, who interviewed me at the CIA in November, left the hotel and his job due to family obligations. Last week, a candidate for his position worked in the Pastry kitchen for his plating, a part of the interview process for any chef at the Hotel. I heard Wednesday that he did in fact receive the job. So, now, the Sanctuary has a new Executive Pastry Chef. (He is originally from Michigan but moved to Charleston from Highlands, North Carolina.)

*Happy Belated Birthday to the best sister in the entire world (yes, my sis is better than your sis or, heck, your sibling(s)). Happy 28th, Jess (wowsers). I hope you had a great day throwing yourself a party in Yearbook. :) I cannot wait to see you today. I love you and do not know what I would do without you. And don't worry, I celebrated St. Patrick's Day/ you in style with that Irish Car Bomb dessert, complete with my fav, Bailey's Ice Cream. :) (See what I mean? Pastry= a reason to celebrate everything with a sweet treat!)
*Happy Belated Birthday to one of my bffs and a regular on the blog, Katy Capers. I hope you enjoyed your "Old Fashioned" Cocktail at the Karaoke Bar. And, I thought about it some more, and if you are going to sing the Dixie Chicks in a bar in Boston, MA, you should just embrace the South, what those around you think of you, let them judge (because you are proud of where you were born and raised), and just sing "Goodbye, Earl" (I mean, I DID name a blog post after the song). :) I love you, Capers.

One Year.

So, it has been a while. It's crazy what a full time job does to one's energy levels and social life (and I didn't really have a super exciting anyway). I eat, shower, drive, work, watch Bones, and sleep. That's my routine. Somehow, I manage to write a blog novel for you to enjoy though...

Literally the DAY after I last blogged, I was stopped on the way to work for my FIRST drawbridge. I was anxious about this happening (see last post), and it happened (weird). That is the ROAD in the air there, as in the road I drive on, over WATER. I survived, though, clearly.

Wednesday, March 2, 2011
I worked in the afternoon, while the Pastry department prepared the dessert showcased at the Food and Wine Festival in Charleston. A freshman in high school from Columbia, named Katie, whose grandparents live on the Island, shadowed in Pastry for the week, and she helped me with a lot of my tasks for the week, working 9-3.
*White Chocolate Macadamia Nut Cookies.
*Chocolate Chip Cookies.
*Brown Butter Cakes.
*Scones.
*Baked Cookies, and Cookies, and Cookies.
*Cookie platters for Banquets.
*Pureed Banana Butter for the Ocean Room.
*Cheesecake Batter.
*Ganache for Festival.
*Caramel for Festival.
March Tasting Menu at Jasmine Porch: Sweet Potato Pie with Sugared Pecans, Orange Double Cream (Orange Chantilly in this photo), and a dehydrated, Grand Marnier-dipped Orange.

Thursday, March 3, 2011
The Sanctuary Hotel Pastry Team had a table at the Charleston Food and Wine Festival. Temperance, Robyn, and Erin went to the Show and served a chocolate, popcorn, pretzel dessert. Apparently, the dessert was well-received and they had a good time. Because the three of them were away, I was "on-call" for the Pastry department. I did a few tasks, while being in the kitchen in case Jasmine needed something or there was an issue with Banquets.
*Cookie plates for Banquet orders.
*Chocolate and Almond Macaroons.
*Chocolate Mousse.
*Pastry Cream.
*Food to Jasmine.
*Sweet Potato Cake Batter for the Ocean Room.
*Cut Croissants for Bread Pudding.
Katie made platters for a Banquet event with these pastries and mini raspberry cheesecakes. (Abbie, head of Banquets, asked for a quick platter for some meeting planners later, and I plated these.)

Friday, March 4, 2011
I worked in Jasmine Porch for service, but I did a few things before I went to the restaurant.
*Baked Scones.
*Thickened Chocolate Sauce.

Saturday, March 5, 2011
Again, I worked service at JP.
*Mixed Berry Fruit Sauce for Lemon Cake Dessert.
*Ganache.
*Scones.
Here's some pictures of my dessert station at JP.
Cart with shelf stable prep. (pretzels, pralines, etc.)
That's THE clipboard and some chocolate message plates on the right!

I made Chef Nick in JP a Lemon Cake Dessert with all the components, because he had never seen or tried the dessert. He had some help sampling from the servers, and one commented it was the best cake they had ever had. (Good job, Temp!)

And Greg in JP made me dinner, complete with roasted tomatoes, sauteed spinach, shrimp, and pasta. Mmmm.
Lemon Ricotta Cake (with Lemon Curd Filling and Buttercream), Mixed Berry Sauce, Lemon Lace Tuile, and Mixed Berry Sorbet.

Sunday, March 6, 2011
I worked 8-4ish, helped a little in Banquets, and helped prep. for Jasmine with Temp.
*Raspberry and Apricot Almond Bars.
*Corn Muffins.
*Prep. for JP.
*Cut Cookies in Half and Baked 60 of four different kinds.

Monday, March 7, 2011
*Trayed and Filled Baskets with Rolls and Foccacia.
*Cut Almond Bars (and got a pretty awesome blister from doing so).
*Toasted Macadamia Nuts, Almonds, Coconut, and Walnuts.
*Filled Bowls for a "Make Your Own Trail Mix" Banquet Station with yogurt raisins, raisins, craisins, dried apricots, dried cherries, chocolate pretzels, coconut, walnuts, almonds, mac. nuts, etc.
*10# Buttercream.
*Pecan Tuile.
*Macadamia Nut Baskets.
*Proofed and Baked Slider Buns, twice (oops).
*I wrote SDD or SPP on my write-it-down-to-blog-about-it-later list but I have no clue what it means now. So, I did this or that too! :)

Tuesday, March 8, 2011
Happy Mardi Gras. I was off for Mardi Gras and did not do much during the day. That night, my roommate, Trevor, Trevor's roommates, and our friend from the CIA, Antonio (who came to Charleston from his extern in Orlando to visit) had a few beers and king cake. It was a fun night and to hang out with more than two people was a treat, too! (FYI, one of my favorite things about baking and pastry is being able to celebrate any and every occasion with sweet treats: Valentine's, Easter, Christmas, Birthdays, Mardi Gras, Fourth of July, Thanksgiving, St. Patty's Day, you get the point...)
When you can't be in New Orleans celebrating Mardi Gras or in Brazil celebrating Carnival, you try and celebrate the best you can.

Wednesday, March 9, 2011
I didn't do much on my second day off, except sleep in really late, from what I considered to be a late night the night before. Tyler (Trevor's roommate from WI), Antonio, Trevor, and I drove downtown to the Kickin' Chicken for dinner. It was relatively low key, even though it did start raining about midway through our meal. Rain does wonders for my hair... :)

Thursday, March 10, 2011
*Pate a Choux, eclairs and profiteroles.
*Prep. for Jasmine Porch.
*Cheese Blintzes.

My sister was awarded Teacher of the Year for Apalachee High School (Go Panthers!) in Winder, Georgia!!! Third time being nominated must be the charm (but that's an honor in itself, to be nominated). She is one step closer to being as cool as/ cooler than me! Congrats, Jess. I am very proud of you (and I think you're cool)!

Friday, March 11, 2011
*Dehydrated, Grand Marnier-dipped Orange Slices.
*Scones.
*Pecan Tuile.
*Orange Double Cream. Double Cream is the weirdest dairy product ever. It comes in these little glass jars, is super difficult to get out of this jar because it is so thick, is expensive, and it tastes almost like straight butter. Chef Ryley liked it so...
*Lemon Lace Tuile. Temperance let me play around with a few designs. I ended up with an abstract wave pattern, just what I had envisioned. It works, and Temperance agreed to it for the Lemon Cake dessert.

Saturday, March 12, 2011
Temperance was off last night, and I worked at Jasmine Porch. I came in around 2pm to do some prep. for the restaurant, which included:
*Scones.
*Dipped Pretzels.
*Pecan Pies.
*Lime Chantilly.
*Pecan Tuile.
Robyn helped:
*Chocolate Chip Cookies.
*Caramel Creme Brulee.
*Lemon Cake.

Erin made some delicious Bourbon Ice Cream for the Ocean Room. I was there when she tried to burn the kitchen down, aka burn off some of the alcohol on the stove. She let me try about a cup of ice cream, and it was delish. I am pretty sure that this ice cream was the reason I almost fell asleep at Jasmine around 8, not from the alcohol but the components of it made me sleepy. Worth it, and slightly funny...

JD in JP :) made me salmon, rice, and broccoli for dinner. He claims he only cooked the salmon with butter and lemon juice, but it was unbelievable. Salmon is my favorite, and salmon done right... mmmm.

Erin, Robert, and I were supposed to get tacos and margaritas yesterday. This is my public apology, because the time change through me WWAAAYYY off.

OFF

Katie Weiser is coming for a few days of her Spring Break TODAY. We plan on exploring Charleston. Finally, I have a FRIEND to go on SC adventures with me! And, my mom, sister, Gamma, and Greens are coming this weekend! Don't be left out of coming to visit Charleston and SEEING ME!

I thought I would end the post with some random tidbits for ya:
*In less than a year now, on March 2, 2012 (I think), I will graduate from the CIA. Craziness, I tell ya.
*Growing up I had a serious fear of elevators (who can attest to this?!). I'm glad I grew out of this elevator-fear stage, because I am fairly certain I would not be working at the Sanctuary at the moment, if I was still plagued. (I mean I have to take two elevator rides just to get from the Pastry Kitchen to Jasmine Porch!)
*I love Army Wives. Once again, judge me, if you want. Part of me, because of this show, thought there was an Army base, Fort Marshall, actually in Charleston. Well, there isn't, but the show IS filmed here in Charleston. Charleston Bucket List #8217349081... find Army Wives.

I MISS LIVING IN ATHENS, TOO, JESS!

Hay Reh

*Keep Japan and all those affected by the earthquake/ tsunami in your prayers!

*Yay, UGA, made it to the Big Dance. GO DAWGS!

*Happy Belated Birthday, Whitney and Britney Boland.

*Congrats, Jon Alligood and family on the engagement. I cannot believe all those FND and Football Saturdays didn't win you over and now I've lost my shot. :) But seriously, Katie is a lucky girl! All the best!

The Color Purple.

I am having the hardest time finishing this blog post. I know, you're just beginning to read, but, like a person losing their mind (anyone over the age of 40... bahaha... just kidding), I have been typing on my post page what I do every day and just saving it. In other words, this post has been ongoing for a while now. This would lead most people to ask why I don't just post every day?! Well, my life is glamorous but not THAT glamorous, and I would bore you to tears instead of enriching your lives once or twice a week with awesomeness and a little humor and some tantalizing treats (right?!).

Also, it is important to note that I have not been feeling well lately. I have/had two ulcers on the back of my lips but inside my mouth. I know, great picture, right? Well, my mom thought they more resembled holes... in my mouth. That's not normal, folks, not normal at all. At one point, I thought two fever blisters were beginning to form. That was bad news for someone who has never had a fever blister, but no worries, I am still fever blister free. My dad thinks it is/was a virus. And as my sister, the English teacher, so kindly informed me, the Biology graduate, viruses can not be treated with antibiotics (like bacteria can) and you must let it run its course. Well, I am thankful to say that the course is almost over. I'm still a little achy as I sit here right now, but the Ibuprofen, Campho-phenique, and Kank-A have almost cured me (though there were points when I thought they were killing me).

Monday, February 21, 2011
*Brownies.
*Cheesecake.
*Pecan and Hazelnut Shortbread.
*Pralines for Jasmine Porch.
*Scones for Jasmine Porch.
*Trained for Jasmine Prep

Tuesday, February 22, 2011
Jasmine Prep included:
*Mascarpone Whip.
*Lime Chantilly.
*Piping "Happy Birthday," "Congratulations," and "Happy Anniversary" on Plates.
*Cutting Croissants for Bread Pudding.
*Baking Lunch Cookies.
*Baking Scones.
*Baking Chocolate Chip Cookies,
In addition I helped Robert (who also graduated from JW and just moved from the night shift to work in Banquets) by making:
*Almond and Chocolate Biscotti.
*Pignoli Cookies.

So, I received two packages in the mail last week. In one package... Bones Season 3. In the other... Bones Season 4. Now, I knew one of these was from my mom, because she had told me to expect a surprise in the mail. I assumed she compared prices and found the best deal at two different places. I immediately texted my friend Katy Capers to tell her, as KC loves her some Brennan and Booth (and has for years longer than me). Then, I looked down and noticed a note to "HayReh." My mom doesn't call me that. Season 4 was FROM KC. She didn't send me 3 because she knew I was well on my way to having it. Soulmates, yes! Thanks, Capers.
Best. Day. Ever. (I am already on disc 3 of Season 3... judge me!)

Wednesday, February 23, 2011
Jasmine Prep included:
*Bourbon Anglaise.
*Macadamia Nut Baskets.
*Pecan Tuile.
*Dipping Pretzels.
*Baking Scones.
*Baking Lunch Cookies.
*Baking CC Cookies.
I also made and did a few things for Banquets:
*Tiramisu.
*Brownies.
*Bagged Brownies (125).
I almost spent like ten minutes helping Erin:
*Warm Spice Cake.

Thursday, February 24, 2011
*Sweet Potato Scones.
I worked from 4-10pm at Jasmine Porch plating dessert, and Temperance trusted me enough to be in JP alone. I almost freaked when a table of eighteen was seated, but only nine of them ordered dessert. I think it went relatively well for my first solo run.
Praline Bread Pudding with Bourbon Anglaise, Caramel Sauce, Salted Vanilla Ice Cream, and a Pecan Tuile served at Jasmine Porch.

My dad and Shirley got married this past Saturday, and I went home to Thomasville (check out my hometown on MSNBC here) for the wedding. Here are a few pictures of me and my sis, the flowers, and the cake (of course).
Classy coordination and hot, just plain hotness.
Notice the Bride and Groom tags.
Dad and Shirley chose the color of the cake from a paint swatch... Silky Petal. Brilliant idea.

My visit to Thomasville also featured:
*Jonah's for dinner. Mmmm.
*My mom taking care of me, the sickly one, which always makes me feel a little better.
*Church.
*Granddaddy's Barbecue.
*The Oscars
*People reading. :)
*A paarrrrrty with our family, with Poppyseed Chicken, Asian Slaw, Rice, Asparagus, Chocolate-covered strawberries, and Dove Ice Cream on the menu.
*Shopping with Mom and Gamma. (I love my grandmother dearly but her+Target+Sunday afternoon+motorized cart= crazy me.)
*Some R&R with my best cats.

Speaking of my best friends, my mizzom left these for me on my bed for when I got home. Best. Day. Ever. Part 2...
Yes, all for me. Judge me... again. (And notice, the half heart on the left, signifying my half eaten box of Russell Stover Valentine's Chocolates, also from my mom.)

On the way back to Charleston yesterday, I was reminded of Reason #757 why I love the South: church signs. When I was an intern at SharpTop, we rather enjoyed finding and sharing rich church signs. I thought I might share my two faves (and in continuing with the blog title, purple is a Biblical color, in case you didn't catch that).

(1) Who is missing from our Ch ch family?

(2) Tomorrow's forecast?
God reigns and the Son shines.

Tuesday, March 1, 2011
*White Chocolate Macadamia Nut Cookies.
*Cheesecake.
*Oatmeal Raisin Cookies.
*Chocolate Cake.

I was an hour late to work today. It's my fault for not looking at the schedule on Thursday night before I left, but I think I will live to work another day at Kiawah despite this minor hiccup. In addition to being late, I also had to attend a seminar of sorts titled "Operation Excellence" today. The focus of the seminar was to remind employees of the resort of our mission statement, core values, importance of verbage and guest interactions, and teamwork and team building. I was expecting the worst, but the two hours went rather fast.

Katy Capers (remember her and her blog?) has been asking me for pictures of Kiawah Island, the Sanctuary Hotel, Charleston, and my apartment. Well, while these pictures are a little unclear and not the greatest, I thought I would start the series with pictures of my apartment (because it is easy to snap photos of where you currently are at the moment). You can skip over these if you would like and don't care to see (as it's not the Sanctuary Hotel), but here you go, Capers!
Living Room.
My room.
Drawers (and dirty clothes :)) in my room.
Closet.

I was just watching Law and Order: SVU and my television mysteriously just turned off. Now, it will turn on for two seconds and then turn right off. Hmmm. I guess this is a sign I should be watching Bones (but I will need to get this fixed). So, Bones and bed it is. 6:45 comes early in the morning!

I HAVE AN IRRATIONAL FEAR OF DRAWBRIDGES

*Happy Birthday, Melissa!
