Beach Bunny Part II.

There are two dining options at the Sanctuary Hotel for Easter, a buffet from 11-4ish at the Grand Oaks Ballroom area or brunch at Jasmine Porch from 12-8. Everyone worked Easter in the Pastry Department, Robyn, Chef, and Erin at Grand Oaks and Temperance, Christine, and me at Jasmine Porch, plus Robert and Richard in the kitchen.

On Easter, I worked from 12 noon to about 11, I was scheduled at the action station making Strawberry Shortcake at Jasmine Porch. Temperance and Christine started work early, finishing last minute things and setting up the desserts at Jasmine. Therefore, after Grand Oaks was broken down, Erin came to Jasmine to help me at the Jasmine brunch and with break down, while Temperance and Christine called it a day. It was a long day, but it was a fun/ exciting day.

The Easter Bunny came to visit me, early! I was afraid that, with this being my first Easter away from home in 23 years, that (s)he wouldn't find me but (s)he did, indeed. (S)He's a silly wabbit! (S)He brought me TWO POUNDS of Russell Stover Cashew Clusters, and I love (her/)him for it. I love (her/)him more already for the ONE POUND that I've enjoyed. (S)He also sent me a beautiful dress, my car tag (suspicious), and gift cards galore. Thanks, Easter Bunny!

Beach Bunny Part I.

Twelve weeks have come and gone, and over two weeks have passed of these twelve since I last posted. I have six more weeks at the Sanctuary, six more weeks living on Johns Island, six more weeks to put a dent in my Charleston Bucket List, six more weeks of living on my own (back to Bank of Mom and Dad... YIPPPEEEEEE :)), six more weeks of the South, six more weeks of fun. I cannot believe that I am two thirds of the way done with my externship. Where has the time gone?

This weekend and last weekend are two of the biggest weekends at the Sanctuary and Resort, Easter and Gourmet and Grapes, a benefit for the Medical University of South Carolina. Therefore, I only had one day off last week and one off this week. So, I have not had time to blog, okay? :) I hope these two posts make up for the time. It's busy and with visitors coming to Charleston, graduations, weddings, etc., my life is going to get even crazier over the next six plus weeks. I love it, and I hope you enjoy reading about it.

Our new CIA extern is here. Her name is Christine, and she is pretty cool. :) I mean, all my fears have been confirmed with her fitting right in, being awesome in the kitchen, and already replacing me at Kiawah. Okay, okay, I kid for the most part, but seriously, though, she is great. I hope she likes working at Kiawah as much as I do, and I can't wait to hang with her when we go back to school!

We also have/had a new Sous Chef in Jasmine. He left as quickly as he came. The end. And the search begins, again!

I mentioned in the last post that some of my friends from high school traveled to Charleston to celebrate Evan's Bachelorette Party. I've known Evan, and some of these girls, since we were four and five years old. Evan and I attended the same school from pre-Kindergarten until we graduated from high school (that's 14 years, folks). She went off to Auburn University after graduation, while I, of course, headed to Athens to the University of Georgia. She moved back to Thomasville after graduation, while I haven't lived in the same place for more than six months since graduation. I wish we saw each other more but one day, when I move back South for good. She is beautiful and amazing and GETTING MARRIED?!!? Thanks for including me, girls. I can't wait to see you in white in a few weeks, Evan!

I met them at Social, a wine bar, on East Bay Street in Charleston after work, and from there, we walked to Trio, a dance club on Calhoun, near their hotel, the Francis Marion. We had a few cocktails and danced and chatted and took pictures and just had a night on the town. It was so fun.

Apparently, Pepsi is a sponsor for the PGA Golf Championship. Kiawah cannot serve Coca-Cola at a Pepsi-sponsored event, and therefore, in preparation for the PGA 2012, Kiawah is switching from Coke to Pepsi. WORST DAY EVER. It begins with switching the machines. Now, instead of UGA Bulldawg Red, the machines are Pepsi Blue (and I'm blue too). We still serve, and I still drink, Coke when I'm in Jasmine, and hopefully I won't have to give up my cola preference in taste before I leave. Man, it's a sad day.

OFF, my only day off with it being Easter week.
Trevor, my culinary friend from the CIA, from PA, who is externing at Jasmine Porch, who lives like five feet away from me, turned the big 2-1 (I am officially a grandma!) about a week ago. Trevor, Dan (also from the CIA, externing in Ocean Room), Astrid (a GA friend from Johnson and Wales), and I all had the day off, which never happens, and we went to Folly for a day at the beach. Our day included Trevor losing Dan's frisbee, and he was a tad bit upset, Dan that is. We, more Dan and Astrid, buried Trevor in the sand, because your 21st birthday isn't complete without a little sand in the mouth to go with that alcohol. And after the beach, we went to Zia, my new favorite spot (thanks, Ern), where I enjoyed a Chicken Yucatan ENCHILADA Christmas-style, with both red and green sauces and a Baja Fish taco. They was delish, and I think everyone enjoyed this new gem of a restaurant.
Folly Beach Pier. Is it bad that I think how this could be damaged in a hurricane? I've lived through too many hurricane seasons, I guess.
What better way to celebrate your 21st birthday than to be buried in the sand? Happy Birthday, Trevor!

I've worked in Jasmine for a number of months now, and just recently, people have started ordering "creme brulee to go." I kind of take this personally when I receive an order for one. Creme brulee is made with egg yolks and can't be unmolded from this dish. I mean, hello?!!? I made it work, though I wasn't happy about it.
Hope you enjoy this creme brulee at home, because it looks so appealing like this.

I woke up at a decent hour, for my day off, in my opinion, before noon. I got beach ready and Alexa, my roommate and I, headed to Zia (same place I've mentioned a lot recently, that we ate for Trevor's birthday dinner) to meet Erin, Erin (a recent CIA graduate and new addition to the Ocean Room) and Heather. We had margaritas and ate lunch before hitting the beach at Folly.

It was a beautiful day for the most part, until it starting raining, then becoming sunny, looking like it was going to pour, then breaking into sun. Finally, we packed it up and headed back to the car. It was snack time at this point. So, we walked to this little place called Tokyo Crepes (I didn't know crepes were Japanese?!) and all ordered a treat, ice cream or a crepe. Erin had a crepe with literally everything sweet under the sun (ha!), called the Dynamite I think?! Alexa had an apple crepe with cereal and other sweet treats. I just had a strawberries and nutella crepe. Why mess with what works, ya know?!

A party of about 15 had the option of bread pudding or key lime pie for dessert. At the time the order came in, I was working at the short table (bread pudding table), which means I stand right in front of the hot box, not a great place for me, when servers need to access more bread. That table is clearly the size of like.. well, it's small. So, as people were finishing their Easter prep, I kindly moved them out of the way to set up for the Key Lime Pies on my regular table. Mise en place and being at home on my regular table does actually make a difference in how I function at Jasmine. "Runner, please." COULD SOMEONE COME GET THESE DESSERTS?
Bread Pudding? Great choice!
Key Lime Pie? Another great choice.

Today was long and tiring. We had a party for about 30, and as a part of their meal, they were offered three different dessert options. Basically, this means that they all ordered dessert. Just as I wanted to start prepping their desserts, I got a rush of orders (doesn't that always happen?). The boys/ servers did offer to help. Then, my torch ran out of gas, literally. This was a problem with creme brulee being one of the three options, but we made it work. Erin brought me the torch from the pastry kitchen. And, I must apologize to her for my stressed out/ I-can't-function-when-my-station-looks-like-a-bomb-went-off-because-we-just-sent-out-desserts-for-30 mood. Thanks for your help, boo bear. Do you still want me to come to the OR? Ha. :) The icing on the cake (ha x 2)? I then received a ticket for four desserts that I wasn't supposed to make?! How was I supposed to know that when the ticket doesn't say "no make?" Congratulations, servers/ Jasmine people, for your dessert sampler. To repay me, can you actually come get the desserts when I call "runner" before the ice cream melts?! :)

Off to work at 4 today, again. I can make it to Wednesday, my next day off, when Dad and Shirley come, right? It's like I'm the little engine that could or Nemo. Just keep swimming, Haley, which is funny, because I'm a beach bunny. (Too much?)

I brought two cakes to Jasmine from the Pastry Kitchen, a 40th birthday cake and a wedding cake, for a small wedding reception at JP. After the ceremonial cutting of the wedding cake and taking pictures of the birthday cake, each cake was brought back to my station for me to cut. You can never have too much cake-cutting practice. :)
Pre-wedding. The top was saved, of course. I cut the bottom into 10ish pieces, and about half of that cake was left.
The couple loves their dog. They love their dog so much that he/she was given special permission to be at the reception at Jasmine.
It was made with nutella. I could smell it. :)

Unfortunately, Lexi moved out due to understandable circumstances. Jessica also moved out, to our previous apartment complex, because she didn't have a car and the shuttle goes/ comes there. So, it's back to me and Alexa in the Grove 10E.

My day off started with my alarm buzzing, which can never good but in this case it was. I met Erin and Heather at Three Little Birds near my favorite Starbucks in West Ashley. The Banana Peanut Butter Smoothie and the Sweet Potato Benedict were ah-mazing. After a quick Starbucks trip, we headed to Heather's apartment. From there, we jumped in my car on our way to Wadmalaw Island to pick strawberries. It was so fun, minus the bugs. And at $2.25 a pound and leaving with $8 worth of strawberries, it was completely worth it for off the vine (vine?) strawberries.
It was only appropriate to wear my "You know you're from Georgia when your favorite food is" shirt.
I found a gem of a strawberry and "how's your mama and 'em?" (see front of shirt...)

I thought I was going to die, and after dropping Erin and Heather off at Heather's, I came back to the apartment with a tummy ache. I was cured with a two hour nap. :) I then proceeded to cheer for my new golf crush, Rory McIlroy, to win the Master's (after leading for 64 holes). Unfortunately, the stress got to the 21 year old and he shot an 80, or +8, that's EIGHT over par. Poor fella. Maybe, I will see him at the Ocean Course at Kiawah in August 2012?! :) Hehe.

Monday was a hard day as a baker for me. It seemed like everything just wasn't turning out. Now, I may have high expectations, too high in some regards, but, when you have key lime base splash in your face, pecan pie crust crack in the tart shell, etc. all while being by yourself in the pastry kitchen, you would want to throw things, cry a little, and give up, right? I think it's the pressure, feeling replaced?! Okay, ha, I'm just kidding. I do like feeling that some of my effort is paying off, however, when I see the final product, and yesterday, I just wasn't feeling it. This is really the first time since I put rice krispy treats in red napkined-baskets (and 600 of 'em at that) in 2009 (not a good idea, right, Teena?) that I've felt like this though. So, my future looks bright. I made it through that (and that summer confirmed to me that I wanted to go to culinary school) and it's a new day in the bakery tomorrow.

Today, I had a "me" day and it was glorious. Celebrating yourself and spending time solo every now and again to explore, be quiet, do your own thing, and focus on the senses is truly important. I slept in then started the day with lunch at Your Pie. (It was $6 pizza Tuesday, and I didn't even know it. And the guy who started Your Pie was my cashier...) After that, I headed to the post office and the Citadel Mall for some Target shopping, among other stores. (Sorry, mom, for being so darn good at shopping. Does it help to know I received a 15% discount for being a student. Not really? For the amount of money we pay for schooling? Oh, Negative Nancy. :)) I headed downtown to check out a couple of stores, which I found I could not afford, but I did purchase what I came downtown to buy. Throw in a little yogurt from FreshBerry (it's in the "Best of Charleston" and I thought I should try it myself...) and Starbucks and the day was almost complete. I live on a island, and a sparse island at that, and I decided to eat dinner before heading back. Zia Taqueria was the winner, where the baja fish taco and the chicken Yucatan taco were delish, along with the chips and salsa. Now, I am here, blogging away and yapping to you people.

Did you know that today marks the 150th anniversary of the start of the Civil War? And, the first shots were fired at Fort Sumter, just a boat ride away from downtown Charleston, where I was today and live about 20 minutes away from. As Americans, have we really made any progress in the 150 years since the Civil War began? Racial equality? No. Southern acceptance? For the most part, no. Northern humbleness? No, again, for the most part. But, that's if we are taking about allegiance and territorial limits. Now, don't get me wrong, as I know the Civil War is a prominent time in our nation's history, but the key point is that this happened 150 years ago. This isn't me arguing for a perfect world, but sometimes don't you wonder what is happening in the world, as far as humanity is concerned? Civil Wars start and continue. Hatred. Violence. Fear. Rage. Poverty. Slavery. It makes you pray ever faithfully for Jesus to return soon. I cling to the hope...
I thought I should document the paper from where it all began on the 150th year... because what would I do with the actual paper if I bought it?!

My friends are coming this weekend to celebrate my friend Evan's last few weeks of being single. Watch out, Charleston. I can't wait.

My John Hancock??!!

Prepare yourself for a hell of a blog...

Life is good. Life is great. Much has changed since the last time I posted. I LIVE ON AN ISLAND NOW. How many people can actually say that they have lived/ live on an island? Okay, it is probably more than I think, but it is exciting, anyway. Not only did I move from West Ashley in Charleston to Johns Island, twenty minutes closer to the resort and to a nicer apartment, I live on Stardust Way. I always knew I was a fairy princess, and now my address proves it:

So, the "season" at Kiawah is here now. Cisco Systems was here last week for a meeting. VIPs, which is every guest really, are in house all the time. Expectations are always high in everything we do, which can be stressful. Changes are happening, with people moving around, getting married, etc. It's nuts. Jasmine Porch is getting busier by the night. And, with Nick, the Sous Chef at Jasmine, now gone, things are challenging in the Pastry area. There isn't a ticket machine at my station, and I have to rely on the people on the line to relay my orders. Nick was awesome at looking out for us in the back, and I didn't know anything other than him being at the front. Well, now, it's crazy; tickets and orders are lost in translation, and it's busy. All of this is a recipe (ha) for a hair-pulling Haley at times, but I love it, nonetheless (though I miss Nick, at the same time).

One of my best friends in the world and fellow Thomasvillian, Tyler Rogers, came to Charleston with some of his medical school friends to run some obstacle course 5K. I, of course, worked on Friday and Saturday, and we met up at the Charleston Market on Sunday. We walked around the Market, explored downtown on foot, and then ate lunch at a Greek-style grille on Kings Street. Tyler, thank you for coming to visit and for lunch. I enjoyed catching up and meeting your friends. Oh, and I miss you!

Erin came to pick me up on Sunday night, and then we went to pick up Heather. We met Robert downtown on Kings Street for delicious sushi. (Also, important to note was the sugar and spice martini I had, made with habanero-infused vodka. Soo different and good.) After sushi, we made a couple of drink stops before heading to Wild Wings Cafe on Market Street to dance the night away to Plane Jane (or is it Plain Jane), a cover band. What a great night.

Lexie, our fourth and final roommate, moved in to Alexa's room. She is originally from PA but goes to school at CofC. She just returned from studying abroad in Spain and will be working for the Recreation department at Kiawah.

My dear friend from SharpTop Cove, Andrew Rabley, came to Charleston from Clemson with his roommates for the weekend. Meeting downtown wasn't really an option with the Cooper Bridge Run on Saturday morning, and Rabley met me at my apartment on Johns Island. We drove out to Kiawah, and I gave him the tour, including the Sanctuary, the alligators at the Nature Center, etc. We made it past the V gate, the second gate to the exclusive part of the island, but it was just to turn around, sadly for Rabley who wanted to see the Ocean Course. We ate at Tomasso at the Turtle Point Golf Course, where the Jasmine Sous Chef, Nick, moved to be the Chef de Cuisine. My poached pear spinach salad and margherita pizza were delicious and the company was delightful. Thanks, Rabley, for coming to visit and for lunch!

Andy, one of the servers, came back to my station towards the end of the night and was talking about how strange of a night he was having. He handed me a dessert menu and asked me to sign it. Apparently, when this guest he was serving has a great dinner, dish, or dessert, he asks the chef to sign the menu, and he keeps it to remember the culinary experience. I guess that's a compliment?! I think he ordered the pecan pie. So, I gave away my John Hancock to a guest because he liked my pecan pie.

Greg, one of the chefs at JP, left Kiawah, and April 2 was his last night. I piped a "We will miss you!" plate and was going to make him a dessert of his choice, but he didn't want anything. Sad, we will miss you, Greg!

*Milk and Honey Quick Bread and Base. We replaced the scones served in the bread basket at Jasmine with these delicious muffin-ish mini loaves. The response is overwhelmingly great. One guest even asked for the recipe on the first night, and other guests wanted them delivered with room service one night, asking specifically for them.

OFF.
I am off today, after my eight day stretch. I was supposed to have tomorrow off as well, but Temperance just texted me about coming in. So, I am going to try to enjoy my next few hours off and tomorrow, until I head to work around 4.

A new CIA extern starts in the Pastry kitchen next week. I am excited about her coming. Apparently, she is going to be trained to plate and prep. for Jasmine Porch, and I am moving back to production and Banquets. I am excited about a change of pace, but I really do love JP. I will miss it and the people dearly. Can you believe I have been here for over two months and have a little over two months to go? I'm almost at the halfway point. Life, I demand you slow down. Ha.

It has been raining here lately, but I will take the rain over the snow, which is still happening in APRIL up North. Katy Capers, it will all be over soon. Snow or $50 tank of gas, KC? :) It better not be cold when I move back in June. :)
